More Pizza, Donuts, Latin Food for Bay View

Plus: Hello to MilTex Kitchen and Discourse cafe's second location and goodbye HIYA Taco.

Tulum Latin Gastropub, the restaurant taking over the old Odd Duck space at 2352 S. Kinnickinnic Ave., is opening this week. The new restaurant specializes in Caribbean, Cuban, Peruvian, Puerto Rican and Mexican food. The news of the restaurant’s opening comes from Milwaukee Record, who spoke to an employee Sunday evening. New Pizza and Doughnut Shop For Bay View

Andrew Swofford, owner of popular mini doughnut pop-up Happy Dough Lucky, is establishing a brick-and-mortar location for his unique doughnut brand in Bay View. The new concept will move into the former Hue restaurant space at 2689-2691 S. Kinnickinnic Ave., sometime between late summer and early fall. Aside from a restaurant that will serve doughnuts and eventually pizza, the place will include interactive elements, Swoffard says, such as mini video games and televisions that will stream cartoons. Lori Fredrich reports:

“For years, we’ve needed more space to accommodate catering orders and prepare for festivals during the summer months,” says Swofford, who says he has always aspired to taking the brand to the next level by establishing a brick and mortar restaurant.

Swofford says that, although the menu is still in the works, guests can count on a menu of both classic mini doughnuts and loaded doughnuts, along with a full coffee bar.

Swofford says he’s currently working with a local chef to develop a recipe for pizza dough, with the anticipation of offering pizzas that emulate the Neapolitan style with a crust that’s crisp on the exterior, but chewy on the inside.

Experimental Coffee Shop Comes To Museum

Discourse, an experimental coffee pop-up that started in Door County before making its way down to Milwaukee, has opened a temporary second location. The coffee purveyor will have a five-month residency at Café Calatrava inside of the Milwaukee Art Museum (MAM). Discourse’s primary permanent location remains at the Crossroads Collective. Its new location at the MAM will operate Tuesday through Sunday from 10 a.m. to 4:30 p.m., staying open until 7:30 p.m. on Thursdays. Jeramey Jannene reports:

“We’re incredibly honored to be working with such a legendary establishment in the community,” said Ryan Castelaz, Discourse founder and creative director, in a statement. “The Discourse team and I pride ourselves on the craftsmanship behind our drinks, and we’re beyond excited to open up shop alongside an organization that shares our dedication to creativity.”

Discourse will offer a menu of coffee and tea options at the cafe. It will offer coffeeshop-staples like vanilla lattes, while also offering new drinks like “‘In Bloom’ Crenn.”

The “In Bloom” drink is a jasmine tea that includes lemon juice, wildflower honey, lavender, yuzu kosho, honey roasted pistachio and cured sumac. “Beetnik,” a sous vide coffee, includes candied pistachio milk, silk chili honey, orange oleo saccharum, bitters blend, apple-beet powder and edible flowers.

Downtown Ghost Kitchen Getting First Food Purveyor

The construction of a new food hall that will house delivery-focused businesses is currently underway, and its first tenant is already preparing to open. MilTex Kitchen, a food truck offering a fusion of Milwaukee and Texas staples, will set up shop at 733 N. Milwaukee St. Graham Kilmer reports:

The small kitchen will likely be an upgrade for MilTex and its food truck operation. On March 23, owner Raven Bivens Gee posted on an instagram page for the business, “I got my Key’s for my new Restaurant today! I’m super excited.”

MilTex’s food will be a blend of soul food dishes, diner favorites and bar food classics; and many are named for a landmark, neighborhood or park in Milwaukee or Texas. Items include the North Avenue reuben fries, the Jamaican Beach egg rolls (a nod to the city in Texas) and the Sherman Street Polish.

According to the business application filed with the city, MilTex plans to open its new space by May 1, and its planned hours of operation are from 10 a.m. to 12 a.m. seven days a week.

Now Closing: HIYA Taco in Shorewood

HIYA Taco, a restaurant that served tacos, salads and shareable sides in Shorewood, has officially closed. The restaurant opened in August 2020 at 4144 N. Oakland Ave., replacing Ruckus, a burger concept opened by Colectivo. The closure was confirmed by OnMilwaukee.
