The Bartolotta Restaurants Presents a Wagyu Showcase With Hall of Fame Farms

For more than 30 years, The Bartolotta Restaurants has championed the quality, authenticity, and spirit of Wisconsin’s homegrown farmers and ranchers. On Wednesday, May 6, at 6 p.m., the team will welcome a true champion – Wisconsin native, NFL Hall of Famer, and rancher Joe Thomas to The Commodore – A Bartolotta Restaurant, for a one-night-only Wagyu Showcase with Thomas’s Hall of Fame Farms.

Here’s everything your audience needs to know about the collaboration.

  • World-Class Wagyu Menu. The Commodore – A Bartolotta Restaurant’s one-night-only Wagyu Showcase will feature Hall of Fame Farm’s remarkable beef selection alongside a curated menu crafted by executive chefs across The Bartolotta Restaurants and overseen by The Bartolotta Restaurants Director of Culinary & Corporate Executive Chef Aaron Bickham.The menu is complemented by a lineup of Wisconsin beers and handcrafted cocktails, and the evening begins with a signature welcome cocktail featuring J. Henry & Sons Wisconsin Straight Bourbon. Guests will enjoy passed canapés such as Wagyu beef tartare, Wagyu nigiri, Wagyu cheddarwurst, and The Commodore slider. Chef stations will showcase marinated grilled Wagyu skirt steak, koji-cured Wagyu zabuton, Southern braised Wagyu oxtail, smoked Wagyu tri-tip, and Urfa-crusted Wagyu culotte, alongside a signature carving station featuring Wagyu strip loin. Dessert options include whipped bone marrow custard, salted butter cake, and gooey butter cake.
  • Hall of Fame Farm. One of Wisconsin’s most celebrated athletes, Brookfield native Joe Thomas’s family farm started with just a few cows and has grown into a celebrated boutique beef supplier.

Considered some of the finest Wagyu cattle in the country, Hall of Fame Farm cattle are raised with a low-stress, hands-on approach, the herd is nurtured with premium nutrition, elite genetics, and a profound respect for animal welfare. The result is beef defined by extraordinary marbling, exceptional tenderness, and a depth of flavor that can only come from raising cattle the right way.
