Loaded Baked Potato Restaurant Planned For Downtown

Loaded Spud would bring new lunch option to Water Street.

A new restaurant serving loaded baked potatoes is proposed to open at 789 N. Water St., replacing the salad-centric Colour Palate on the first floor of The Druml Company‘s downtown office building.

Loaded Spud aims to “redefine comfort food,” according to its website, with a menu of baked potatoes and customizable toppings.

David Hinton of Urban Life Development Group, LLC will lead the new business. Hinton’s previous experience includes general manager roles at several local establishments including Good Life and Sake Tumi. In a license application, he also notes ownership of another restaurant.

With proposed hours from 7 a.m. to 10 p.m. Monday through Saturday and 7 a.m. to 4 p.m. Sunday, Loaded Spud would cater to a diverse range of dining experiences, from the early-morning crowd and office lunches to late-night bites.

The 3,486-square-foot restaurant plans to open in May, according to a license application. It will offer a fast-casual experience, with options for sit-down dining, takeout or delivery.

Colour Palate, the previous tenant, opened in 2015 and later expanded with a second location in Wauwatosa. Both have since closed.

The 67,660-square-foot Druml office building was renovated in 2022, with updates to its lobby, common area corridors, tenant fitness center, shared conference center and tenant kitchen, according to Urban Milwaukee’s previous reporting.

Current tenants include Fiduciary Real Estate Development, Employees’ Retirement System of the City of Milwaukee and Wisconsin Bank & Trust.

Loaded Spud is the third new restaurant proposed for the block in the past year. Awi Sushi and Mediterranean Grill both recently opened just south of the upcoming business.

Hinton was not available for comment by the time of publication.
