The Diplomat On Brady To Reopen
Chef Baldwin adds top-tier talent to restaurant.
Milwaukee (July 21, 2021) – Chef Dane Baldwin will reopen his restaurant The Diplomat at 815 E. Brady St. on Wednesday, July 28, from 4 to 9 p.m. The Diplomat’s hours of operation will be Wednesday through Saturday, 4 to 9 p.m. Since it debuted in August of 2017, The Diplomat has offered an intimate dining experience with a small plate menu of American regional cuisine.
Joining Baldwin as part of the reopening are Chef Joe Schreiter, Chef Andrew Fisher and General Manager Vince Halpin. Baldwin and Schreiter have known each other for years and are currently looking for new opportunities together. Schreiter was most recently executive chef at Mistral in Bay View and will be lending his talents to Baldwin and The Diplomat for the next few months. Fisher was most recently corporate chef at Alto-Shaam and prior to that spent nearly two years as executive chef at Harbor House.
The Diplomat’s offerings will continue to include signature items and dishes beloved by Wisconsinites. Baldwin will keep the menu small and refresh it frequently to reflect the changing seasons, incorporate local produce and take advantage of creative opportunities.

Baldwin began working in the food industry at age 15 and says his ultimate dream has always been to have his own restaurant. He’s a field-trained chef who has the necessary ingredients for success – desire, drive and determination.
Chef Baldwin is a two-time James Beard Award semi-finalist for Best Chef in the Midwest, earning a nomination in 2019 and 2020.
