By - Jul 21st, 2021 03:31 pm

Milwaukee (July 21, 2021) – Chef Dane Baldwin will reopen his restaurant The Diplomat at 815 E. Brady St. on Wednesday, July 28, from 4 to 9 p.m. The Diplomat’s hours of operation will be Wednesday through Saturday, 4 to 9 p.m. Since it debuted in August of 2017, The Diplomat has offered an intimate dining experience with a small plate menu of American regional cuisine.

Joining Baldwin as part of the reopening are Chef Joe Schreiter, Chef Andrew Fisher and General Manager Vince Halpin. Baldwin and Schreiter have known each other for years and are currently looking for new opportunities together. Schreiter was most recently executive chef at Mistral in Bay View and will be lending his talents to Baldwin and The Diplomat for the next few months. Fisher was most recently corporate chef at Alto-Shaam and prior to that spent nearly two years as executive chef at Harbor House.

Halpin is an experienced front-of-the-house manager and most recently was general manager at Mr. B’s – A Bartolotta Steakhouse in Brookfield. Baldwin anticipates Halpin will institute changes to The Diplomat’s wine and beverage program in the coming months.

The Diplomat’s offerings will continue to include signature items and dishes beloved by Wisconsinites. Baldwin will keep the menu small and refresh it frequently to reflect the changing seasons, incorporate local produce and take advantage of creative opportunities.

“The past year has brought us all together and actually strengthened our team,” says Chef Baldwin. “We’re excited to return to in-person dining and can’t wait to create dishes that surprise, delight and excite our guests.”

Chef Dane Baldwin Background

Baldwin began working in the food industry at age 15 and says his ultimate dream has always been to have his own restaurant. He’s a field-trained chef who has the necessary ingredients for success – desire, drive and determination.

Baldwin worked his way up through the ranks, learning from some of Milwaukee’s best culinary masters. In fact, eager to soak up as much experience as possible early on in his career, Baldwin worked three jobs simultaneously – Bacchus, Barossa and Milwaukee Art Museum. He has 20-plus years of restaurant and food experience and most recently was Executive Chef of Mr. B’s Steakhouse. Prior to that, he was Executive Sous Chef of Harbor House and was part of the opening team and Chef de Cuisine at Carnevor.

Chef Baldwin is a two-time James Beard Award semi-finalist for Best Chef in the Midwest, earning a nomination in 2019 and 2020.
