Marcus Chef de Cuisine Joins Carbon Steak

MILWAUKEE, WI — Volante Group is excited to welcome Chef Eric Zangara to Carbon Steak as our new Chef de Cuisine. Eric most recently held the same position with fine dining destination Milwaukee Chophouse – a Marcus owned property in one of the largest convention hotels in Wisconsin. Prior to that, he spent time with Hotel Madrid, Rare Steakhouse, and notable restaurants in Chicago including Eataly. Chef Zangara’s diverse culinary background bolsters our back of house leadership team as he and Corporate Executive Chef Thomas Quinn collaborate on an innovative approach to traditional steakhouse classics, and globally influenced composed plates.
