The season of celebration is extending through the New Year at Bartolotta’s Lake Park Bistro, as the award-winning restaurant prepares to host their 21st Annual Black Truffle Dinner on Thursday, Jan. 16. For two decades, this special dinner has been a must-attend event for Milwaukee foodies, and the 21st Annual Black Truffle Dinner will be no exception.
Bartolotta’s Lake Park Bistro’s five-course Black Truffle Dinner celebrates one of the world’s most prized ingredients, known for its earthy, aromatic flavor and ability to elevate dishes. Featuring expertly crafted recipes that highlight the complexity of truffles, the dinner allows guests to savor the artistry behind each dish while learning the history and purpose of the Urbani black truffle.
Every year, the black truffle takes center stage in this thoughtfully curated dinner menu designed to highlight the essence of this prized ingredient. This year, the menu includes dishes such as Soufflé au Fromage de Chèvre – a warm, aged goat cheese soufflé with leeks, thyme, black truffle-mustard cream sauce and freshly shaved black truffles and watercress; Filet de Sole Farci – black truffle and scallop mousse stuffed dover sole, wrapped in savoy cabbage and served with butter braised salsify, oyster mushrooms, and black truffle vin jaune sauce with julienned truffles; Poussin au Pot et Consommé de Truffe Noire – black truffle stuffed and poached poussin roulade with carrot, celery, celeriac, parsnip, and pearl onions, finished with a black truffle consommé and shaved black truffles; Carré d’Agneau en Croûte d’Herbs et de Cèpes – roasted rack of lamb with porcini and herb crust, potatoes boulangère, braised lacinato kale, and a black truffle red lamb sauce with shaved black truffles; and a Mousse de Chocolat Blanc et Truffe Noire – white chocolate and black truffle mousse with praline crust, white port poached pears, black truffle pear gelee, and candied black truffle. Each course will be expertly paired with a selection of French wines curated by certified sommelier Mariana Popescu.
The Black Truffle Dinner is inspired by The Bartolotta Restaurants owner and co-founder Chef Paul Bartolotta, whose expertise in truffles is unmatched. He has been preparing truffle dishes in the U.S. for more than 30 years and is recognized as one of the first culinary craftsman to bring meaningful quantities of truffles to his menus. These exquisite dishes not only pay tribute to the season but also celebrate his decades-long love for truffles and experience cooking with truffle ingredients in Italy.
