The customer is always right
Though you’ll find him most nights behind the bar at Bryant’s cocktail lounge shaking, stirring and sometimes setting fire to a slew of crafty cocktails and magical potions, Chad Doll eschews the title of “mixologist.” As his blog, Third Coast Cocktails (no relation) states, “I am a bartender, please and thank you.” He doesn’t mean to denigrate any of the hard work or innovative creations coming from other bar chefs, but he insists that his primary focus is on the customer and not his ego (though he jokingly admits that his ego has served him well in this business).
At Bryant’s, Chad can whip up any number of classic cocktails, finely crafted with imported spirits and exotic ingredients, but he’s just as happy to serve up a brandy Old Fashioned, a rum and coke or maybe even a fist bump with your Jäger bomb.
This week on Backstage, Mark and Chad discuss how prohibition changed the way Americans drink and why, no matter what, customer service always comes first.

…brilliant Chad & Mark. On target with the state (and lost state) in the art of bartending and cocktails. 🙂
